Fleece starts as a knit with a raised loop or pile on the inside, then the surface is brushed to create loft. It traps air, which is why it feels warm for its weight.

Hoodie fleece typically runs 280–400 gsm. Above 350 gsm, the shipping cost starts to outweigh the hand-feel benefit for most programmes.
